After a bare four weeks out on Eyam Moor our two hives scraped together a super full of heather honey. If you have never come across this before, the honey is thixotropic. It is actually more of a jelly that a liquid and it needs extracting with a honey press.
Fortunately we have one of these inherited from Charlotte's grandfather.
The resulting honey is delicious. It is a golden colour with a strong taste. The gel-like texture means it has characteristic air bubbles.
