I’m not sure why, but I can never remember if we have mushrooms when I do the weekly shop, and this can result in a humongous fungus mountain in the fridge! This recipe is  good for using them up.

This is a traditional English pancake mix as taught to me by my mum — who happens to be French. It makes five or six pancakes so you may wish to double or triple the amounts.


100g or 4 ounces of plain flour
Pinch of salt
1 Charli's Chooks egg
300ml (1/2 pint) of milk
1 tablespoon of melted butter (optional)

Tasty egg blinis

Box Charli's Chooks small eggs
Dijon mustard
Chopped parsley or cress

This makes a nice starter on larger blinis, or if you fancy them as canapés use a smaller base and cut the egg white into smaller pieces, putting that on top of the mixture.

This is a classic fruit cake recipe. My stepmum bakes in September and feeds the cake regular doses of alcohol up to Christmas day. But most of us never plan that far ahead, and early December is a good time to prepare a festive cake. A couple of weeks still gives the flavour time to develop while closer to Christmas you will be too busy with other things.
